I was wondering if there are any controls available to search by category. For example, a user wants to search all documents that are "IT" and "Requirements" - they would click the ("IT" and "Requirements") checkboxes in the category tree and DMX would return those documents.

You'd need to make a custom search module. It is not built into the main module.
