Several times my Admins have accidentally deleted folders (and all the documents within). What is the best way to set the folders so that no one can delete them by accident?

Admins have super powers. That is the whole reason they are admins. If you have admins that are destroying stuff, I'm not sure I'd make them admins. DMX already includes several mechanisms to protect against undesired deletions. There is soft vs hard delete (only admins can hard delete). And there is the graveyard allowing the (partial) recuperation of hard deleted content. But the short answer to your question is: remove admin rights.
